Rockin' DK Ranch High Protein Scrambled Eggs
*This recipe is per person. Sometimes we cook for 4 or 5 and sometimes it's 20!
Ingredients
Olive oil to coat the pan
2 eggs
1⁄4 cup cottage cheese (full fat is best, low fat is too watery)
Salt and pepper to taste
Directions
Add eggs to cottage cheese in a bowl and whisk well.
Heat oil making sure it's not too hot.
Stir eggs around with a rubber spatula until set. They should cook in about 2 minutes or less per recipe.
We keep a flock of backyard chickens and have plenty of fresh eggs. We like adding cottage cheese to the eggs because it adds several grams of protein to the already high protein eggs. The extra protein keeps our hunters and guides fueled for the day and particularly grueling hunts!
