Easy Homemade Cinnamon Rolls (No Yeast Required)
These are a family favorite, so easy to make (no yeast required), and so much better than store bought.

Pre-heat oven to 375F
Start by making the dough. You'll need
• 3 1/4 cups self rising flour (MUST use self rising flour) if you don't have self rising flour you can create your own from regular flour by adding 1 1/2 tsp baking powder + 1/4 tsp of salt for every cup of all purpose flour
• 6 Tbsp salted butter softened, must be softened. melting the butter can affect the dough. Room temperature is best.
• 1 1/4 c. whole milk
You can combine by hand or use a KitchenAid mixer to combine and knead dough with the hook attachment.
If dough seems dry you can add a tad more milk a tablespoon at a time until you have a nicely combined dough but it shouldn't be sticky. If you find the dough a bit sticky add a little more flour.
Once dough is combined, place on a mat and roll out with a rolling pin into a circle. Dough should be rolled out evenly but not too thin.
Once the dough is rolled out, spread top with softened butter until evenly covered, about 2 Tbsp.
In small bowl combine 1/4 c. of sugar, 1/4 c. brown sugar, and cinnamon. There’s not an exact measurement of cinnamon, just add as much as as you like.
Organic Saigon Cinnamon has it has a stronger and sweeter flavor than regular cinnamon.
Spread sugar mixture evenly over buttered dough. If you like pecans in your cinnamon rolls, sprinkle with pecans.
Tightly roll dough into a log.
Evenly cut sections into individual cinnamon rolls (start by cutting in half and then work your way out cutting into even slices) and place in a baking pan that has been greased with butter.
Bake for 25 minutes and top with icing made with powdered sugar, milk and vanilla (Mexican Vanilla has a more robust flavor).
Start with 2 cups of powdered sugar in a small mixing bowl. Add vanilla and milk a teaspoon at a time and stir until you have the amount of icing you need at a consistency you like, thick or thin. A little bit of liquid goes a long way with powdered sugar. Only add a teaspoon of wet ingredients at a time and stir until you get the right consistency.
